Every girl knows that when the leaves start falling, the pumpkin spice starts flowing.
Some of the best parts of fall include cozying up in big sweaters, watching the leaves change colour and fall to the ground, and most importantly enjoying this seasonal flavour however, and wherever possible. The first pumpkin spiced latte of the year is the true sign of the seasons changing. However, along with all the beautiful pumpkin goodness that the season brings, comes a lot of unnecessary added sugars. Fear not fellow basic low-carbers, where there is a will, there is a way. This year, I have dedicated the first few weeks of September to finding the best ways to get your pumpkin fix, without all the carbs. Here are three of my favourite ways to enjoy Pumpkin Spice low carb style.
1 - Coffee
It may or may not come as a shock to you that a grande Pumpkin Spice Latte from Starbucks can pack up to 55g of sugar! That’s the equivalent of almost 14 sugar cubes!!! Now, as a student who is constantly bouncing between class, the library and the gym, I know how important getting that caffeine fix is. I don’t think I even truly wake up until I’ve finished my morning cup of coffee. Thanks to Jordan’s Skinny Mixes limited edition Pumpkin Syrup collection making a DIY PSL is not only easy, it’s also cost effective! One of my goals this year with starting a new program was to not be constantly spending money on expensive coffee shops. It definitely does not help that there is a Stella’s directly in the building where all of my classes take place. Winnipeg people, you know the struggle! But, since coming across these syrups I have been making barista level coffees in the comfort of my own home!

2 - Pumpkin Chocolate Chip Loaf
Is it even fall if I can’t reach for a slice of steaming hot, fresh out of the oven pumpkin loaf? My mother-in-law makes some of THE BEST pumpkin loaf I have ever tasted, so it’s probably good that I’m half way across the country this fall. I find it very hard to say no to her baking. This year I took advantage of having to make my own baked goods and found a recipe for my own Pumpkin CHOCOLATE CHIP Loaf…because chocolate makes everything bette, right? Disclaimer: This pumpkin loaf, made with coconut flour and Lily’s sugar free chocolate chips is AMAZING. It filled my entire house with the smell of freshly baked deliciousness and was also a hit at my fall neighbourhood potluck!

3 - French Toast
There is nothing better than waking up and realizing it’s the weekend. That’s mostly because the weekend means that it’s acceptable for brunch to be the most important meal of the day. One of my go-to brunch favourites is French Toast, and obviously bread is not low carb. Thankfully there are so many ways to fill the bread void while eating low carb. This recipe is one of my favourite due to it’s versatility. This 90 second MICROWAVE bread can be transformed into the perfect brunch addition. If you want to be super extra, you can fancy it up with some freshly whipped cream and sugar free pancake syrup!
